You can feel the eco-friendly commitment at Waverley Hills as you walk through the fynbos garden to the tasting room.Indigenous plants, some carrying informative labels, surround the water feature, redfin minnows – an endangered indigenous freshwater fish- swim below the surface, and the prolific birdsong brings a smile to your face.
Inside the tasting room is modern with a wide counter and leather sofas. They don’t charge for wine tastings, and when they have stock you can also taste the farm’s organic olives.
The restaurant has a relaxed and welcoming country feel, decorated in pale wood with light grey walls. There is a superb view from the outside balcony, the perfect place to enjoy a meal in summer. Outside is a lovely play area for kids and you can keep an eye on them from the balcony. Although we couldn’t stay to eat, a quick look at the menu revealed lots of choice including pizzas, sirloin steak, Moroccan lamb shank curry (sounds great) and Butter chicken. Imaginative starters boasted fynbos flavours- wild dagga and honeybush. The restaurant offers a five-course organic food and wine pairing- outstanding value at R350 (price at March 2016).
The wines and olives at Waverley Hills are certified organic by SGS, and the farm has been a leader in conservation since the first grapes were planted here in 2000. The area has abundant fynbos, and the owners have set aside a big chunk of land for conservation and cleared it of all water guzzling alien vegetation. You are welcome to hike or mountain bike on the farm trails provided you first notify reception in the tasting room.
There is a thriving fynbos nursery at Waverley Hills where plants are propagated for Landcare. This organization is active in rehabilitating the banks of the Breede river, which has its origins in the Witzenberg mountains behind the farm. If you want fynbos plants for your garden, you can buy them here in pots- a great memento of your visit.
